Traditional Art of Bilona Method
Our organic ghee is made with utmost dedication using the Traditional Bilona Method, a painstaking age-old draughtsman’s turn designed for excellence in Indian cooking. It commences with fresh, raw milk of Malnad Gidda cow species, which is allowed to naturally sour, aiding beneficial bacteria to form a solid mass, conceal.
After the mass is solidified, a traditional churning device rotates the solid part. This process is known as dividing butter and buttermilk. The unrefined butter which is obtained is then simmered for an appropriate time frame until the butter alters to a golden colour and starts emitting a nutty aroma. This undistorted, untouched, packed jar retains fats, nutrients and flavours. The core of our commitment to quality and tradition.

What makes our honey so special?
Harvesting honey from the Sundarban Forest is a delicate and traditional process carried out by local honey collectors, often referred to as "Mawals." These collectors venture deep into the mangrove forests, navigating through dense vegetation and waterways. They carefully locate the hives of wild honeybees, which are often found in high tree branches or within the mangrove trees. They ensure minimal disturbance to the bees and the surrounding environment. This method not only preserves the natural habitat but also maintains the purity and unique flavor of the Sundarban's Forest honey.

Keep the honey in its original container or transfer it to a clean, airtight glass jar to prevent moisture absorption and contamination.
Why raw honey gets crystallized?
Raw honey crystallizes due to its natural composition and the presence of sugars. It contains two primary sugars: glucose and fructose. Glucose tends to crystallize more readily than fructose, and when honey is harvested, it often has more glucose than the water content can keep dissolved. Over time, the excess glucose separates from the water, forming tiny crystals. Additionally, raw honey contains pollen and other natural particles that can act as nuclei for crystallization. Lower storage temperatures can accelerate this process, causing honey to crystallize more quickly. This natural occurrence does not affect the quality or taste of the honey and can be reversed by gently warming the honey.
